Piri Piri Chicken

like Nandos but nicer

For the marinade

  • 1 whole onion
  • 2 cloves of garlic
  • 5 pcs cili api
  • 1 red chilli
  • Some fresh basil
  • 1 tbsp dried herbs
  • 1 tbsp freshly ground black pepper
  • 1 tbsp vinegar
  • 1 tsp salt
  • 1 tsp curry powder(for color)
  • 1tbsp treacle(for color)
  • 1 tbsp Worcester sauce(optional)
  • 1tbsp Sriracha

Method

  • Preheat the oven at 180C for 30mins.
  • Butterfly the chicken and sear the skin of the chicken on a hot pan. Transfer into the oven and cook for 1 hour or until done. Set aside the chicken.
  • Scoop out all the bits from the oven tray and put back into the pan.
  • Add in cream, and adjust the seasoning. Serve on the side as the dipping sauce.
