Chicken Pot Pie

with flacky pastry. for two.

for the topping:

  • frozen filo pastry

for the filling:

  • 2 cloves of garlic, chopped
  • 1/2 whole onion, chopped
  • 1 whole celery, chopped
  • 1 tbsp butter
  • 1 dried basil leaf
  • 1 tbsp flour
  • 1/4 cup cooking cream or milk
  • 1 tbsp freshly ground black pepper
  • 1 cubed boiled potatoes (or microwave for 5 minutes)
  • 1 cup mushroom
  • 1 bunch of spinach

for the egg waSH:

  • 1 egg
  • 1 tbsp cooking cream

method

  • preheat the oven at 180c for 30 minutes
  • saute the onion, garlic and celery with butter. add in dried basil leaf and freshly ground black pepper.
  • add in flour, and cook until brown.
  • add in cooking cream, chicken, cubed potatoes, mushroom and spinach. salt to taste.
  • pour into a casserole dish. roughly fold filo pastry on top.
  • brush with the egg wash mixture and bake for 15 minutes.
