For the cabbage:

  • 400g Chinese cabbage (cut about 1 inch)
  • 4 tbsp salt
  • 1 cup water

For the flour paste:

  • 1 tbsp rise flour/corn flour
  • 1/4 cup water
  • 1 tbsp sugar
  • 2 cloves garlic
  • 1/2 onion
  • 1 tsp salt
  • 1 tbsp chilli powder
  • 3 green onion
  • 1 carrot/ chives (julienned)

Method

  • Soak the cut cabbages with water and salt in a large bowl.
  • Mix and leave it soak for 30 minutes. Mix every 30mins, repeat 3 times(total time 1hour 30mins)
  • Finally, rinse and let dry.
  • To make the flour paste, microwave the ingredients *for the flour paste for 1 min. Stir and set aside.
  • In a large bowl, coat the cabbages with the flour paste.
  • Taste and adjust the seasoning using salt, sugar or fish sauce.
  • Store in a container and leave it at room temperature for two hours before storing in the fridge.
